Aged Smoke #2 at SakaMai

SakaMai is one of those gems that is so good, you almost don’t want to tell anyone and keep it a secret for yourself. This Lower East Side Japanese Izakaya serves up incredible food by Chef Takanori, impeccable hospitality and has an insane sake list.

They do just about everything right at SakaMai, so of course, their cocktail program is a real winner. Their signature Aged Smoke #2 is a stirred spirit forward cocktail was created by Karen Lin.

Lin says of the drink “This is a smoky, sultry cocktail perfect for chilly winter evenings. Cinnamon sticks and cloves impart a deeply-spiced smoky undertone to the snifter, which is then filled with an alluring combination of barrel-aged sweet vermouth, cacao liqueur, rye, Hanahato Kijoshu aged sake and a dash of almond extract.”

Aged Smoke #2 recipe and preparation:

  • .25 oz Antica Formula Sweet Vermouth
  • .25 oz Tuthilltown Cacao Liqueur
  • .25 oz Bowmore 12 Year
  • .5 oz Hanahato Kijoshu (8-year aged sake)
  • 1 oz Old Overholt Rye
  • Dash of almond extract

Prepare about 1 tablespoon each of crushed cinnamon sticks and cloves. Torch spices on heat proof surface/plate and cover with snifter to catch smoke. While smoke is being made, combine all liquid ingredients into stirring glass. Add ice and stir. Strain into smoke-filled snifter, and enjoy!
