Sottobosco Drink at illy Caffè San Francisco

Illy’s modern cafès serve Italian coffee, pastries and light fare, under their playful, signature espresso-cup chandelier.  For the illy Caffè fall menu, Giorgio Milos, Master Illy Barista, has brewed up the Sottobosco, a hot chocolate drink -made with illy espresso, naturally.

“This drink celebrates the aromas and flavors of an autumn day in the forest,” shares Milos. “Hot chocolate, autumnal berry jam and rich heavy cream and finished with cool espresso frappe.”

Sottobosco Drink Recipe and Preparation

  • 1 tsp Mixed Berry Jam (best results are jams containing cherry or red current)
  • ½ oz Chocolate Sauce
  • 1 ¼ oz Heavy Cream (36%)
  • Double Espresso Shot

In a small steaming pitcher add 2oz whole milk, 1/2oz (1 pump) chocolate sauce and 1 tsp mixed berry jam. Set pitcher aside. Measure 1.25 oz heavy cream into a 3 oz pour pitcher. Set pitcher aside. In mixer cup put .5 cup ice and .33 oz. liquid sugar {simple sugar). Prepare a double espresso in 3 oz pour pitcher and add to the mixer cup. Mix on MED setting for approx. 1 minute, until thick

While coffee is mixing: Steam chocolate milk and jam mixture until warm. Do not create froth. Pour chocolate mixture into serving glass. Slowly pour the heavy cream on top of the chocolate mixture. Top the cream with 2” layer of the coffee frappe
