There’s no denying that January is the time when many people start their resolutions, and top of the list is taking a break from alcohol after an extra-boozy holiday season. Or maybe you are simply a non-drinker who enjoys a craft cocktail while out with friends. Either way, the Spice & Everything Nice at True Laurel in San Francisco is just the drink to try now.
Concocted by Nic Torres, the owner and bar director at True Laurel, the Spice & Everything Nice is made with a rich blend of Seedlip Spice 94 – a mix of aromatic Jamaican Allspice berry and Cardamom distillates – along with chamomile tea, Fees Bros non-alcoholic bitters and housemade pink peppercorn gum syrup and D’Anjou pear vinegar.
“The drink was guided by my love for the Manhattan, but ultimately it tastes nothing like it,” explains Torres. “I broke the Manhattan down into elements: the base has spice, the wine is herbaceous and brings body, and the bitters tie everything together). I sought to celebrate these winter and fall flavors and ended up with a year-round drink.”
As for the ingredients, many made in-house by the True Laurel team, Torres adds, “The spice elements tie with the sweetness and spice front the peppercorn, the chamomile brings floral and apple notes as well as provides grip through tannins. Some acidity from the pear vinegar and winter’s spices from the bitters brings it all together.”
Ideal for Dry January but perfect for any time of year.
Spice & Everything Nice recipe + preparation
- 2 oz. Seedlip Spice 94
- 2 tbsp. heavy-steeped chamomile tea
- 1 tbsp. pink peppercorn gum syrup
- 2 tsp. D’Anjou pear vinegar
- 4 dashes Fee Bros non-alcoholic aromatic bitters
Add ingredients to mixing glass and stir; strain into coupe glass and garnish with lemon peel.
