Adjoining its sister AvroKo property, Saxon + Parole, the agave forward concept is headed up by Ignacio “Nacho” Jimenez. With its sexy dangling red lights and salsa heavy playlists, it has been an industry hangout and home to so many latinos looking for a party vibe fueled by all things agave.
As Vegas has become home to so many NYC second outposts, it is no surprise that The Cosmopolitan tapped into Ghost Donkey for their Block 16 food hall. We spoke to Nacho to get some of the scoop on Ghost Donkey Vegas.

Why is Las Vegas a great fit for Ghost Donkey?
Las Vegas is all about discovery and engaging all the senses, and this is also the vision behind Ghost Donkey. First, the bar is through a secret door inside Block 16 at The Cosmopolitan so anyone who wants to go really has to look for it and seek it out. Secondly, as you walk through the doors, you’re immediately hit with the glow of the red lights and the upbeat tunes that create our signature festive atmosphere. Lastly, the food and cocktails are inventive, flavorful and take you on a journey all their own. Mezcal is still a spirit that’s being discovered by a lot of people and we take pride in introducing that spirit to them – another sense of discovery. All five senses are engaged creating a true Las Vegas experience.
What can guests expect if they have never been to GD?
Again, it’s an experience that hits all 5 senses and that’s a fairly unique quality of a cocktail bar. It definitely has a high-low vibe where the environment and atmosphere is very casual – like walking into my home where you are greeted with true Mexican hospitality. Think good tunes, a celebratory vibe and friendly faces everywhere. The food and beverage program is created with very high quality ingredients, and it’s reflected in the final products. Yes, we make a margarita, but we make the best margarita you’ll ever have because it’s made with the best we can find and also with little twists here and there that make it special (and potent!).
How will Ghost Donkey Vegas be different from NYC?
Honestly, Vegas and NYC look and feel very similar. The concept is so authentic that we didn’t want to change it too much because it’s something that can resonate with all kinds of people, anywhere in the world. For Vegas, the bar is more “hidden” than it is in NYC and that’s to help give the guest more of a sense of discovery, both within The Cosmopolitan and also throughout the city itself. The beverage menu also has some new additions tailored a bit more to a Las Vegas audience, but all the Ghost Donkey classics are still available.
