Halo-halo at The Baldwin Bar in Woburn, Massachusetts

In case you haven’t heard, there are some really exciting things going on behind the bar at The Baldwin Bar at Sichuan Garden in Woburn, Massachusetts. Located just outside the city of Boston, the team at Ran Duan’s mixology mecca – named one of Esquire’s Best Bars in 2017 – are concocting some serious craft cocktails like the Halo-halo.

Crafted by Lead Bartender Justin Ang, the Halo-halo – which translates to “mix-mix” in Philippines-born Ang’s native Tagalog language, is a refreshing blend of rum, cacaçha, ube coco milk, pineapple juice and lime, perfect for summertime sipping.

“What inspired me to come up with this cocktail is back when I was a child in the Philippines,” explains Ang. “Growing up in a country with hot, tropical weather, I would always crave for something cold and refreshing, like the Halo-halo.”

This cocktail, Ang explains “is basically comprised of a plethora of ingredients like coconut shavings, jackfruit slices, mango, flavored tapiocas and jellies, a couple of dollops of ube, all layered in shaved ice. The possibilities are endless!”

Finally, adds Ang: “the key ingredient, a good amount of evaporated milk (or condensed milk) poured on top. Voila! Just grab a spoon and it’s ready to be mixed-mixed!”

For this cocktail, Ang used a split base of Privateer silver rum and cachaca. “I love how the funky sugarcane element from both spirits play along with the ingredients,” says Ang. “Then we add our homemade ube solution (which has purple yams, coconut milk, sugar, condensed milk), and also pineapple and lime juice to balance out the acidity. The Halo-halos [is] not only delicious but also aesthetically pleasing since it has layers of colors.”

  • 1.5 oz. Privateer silver/Leblon cachaça blend
  • 2 oz. housemade ube coco milk
  • .75 oz. pineapple juice
  • .75 oz. lime juice

Shake ingredients with ice, and serve over crushed ice in a Zombie glass. Garnish with mint, dehydrated and coconut flakes.
