Ingredient-Driven Cocktails at Lyaness in Sea Containers London

One of the World’s 50 Best Bars, Lyaness, can be found on the ground floor of the Sea Containers London Hotel (formerly Mondrian London) on the South Bank.  Spearheaded by award-winning barman Ryan Chetiyawardana (AKA Mr Lyan) and his team, this world-class bar has a bold new concept that features an experimental cocktail program with seven core ingredients:

Three remaining and much-loved ingredients from the old menu – Infinite Banana, Purple Pineapple and Onyx – plus, four newly added, Peach Emoji, Vegan Honey, Tea-mooth and Golden Levain.

This non-traditional and playful cocktail menu empowers guests to make choices about their drinking experience based on their taste profiles.

The venue, formerly the home of Dandelyan, has been re-imagined by Mr Lyan, in collaboration with designer Jacu Strauss and the Lore Group, to maximize on Lyaness’ two important features  -the theater of the bar, and its views across the Thames and the city of London.

Golden South Sea Pearl Diver

(Golden Levain)

Rich, yet, balanced; Bombay Sapphire Gin, Bacardi Cuatro Rum, Beurre Noisette, Strawberry and Golden Levain –this rich syrup ingredient merges all the yeast flavors found in Champagne, bread, pastry and beer, by using a sourdough starter which is mixed with miso and sake kasu before being baked, then blitzed with sugar and water.

Second Prelude

(Vegan Honey)

A nod to the Classic Milk Punch;  Grey Goose Vodka, Citrus and Kinome Leaf Oleo, Aecorn Dry Aperitif (made from herbs and acorn) and Vegan Honey – this inverted sugar syrup is a manmade version of honey produced by bees,  with a blended flavor profile of melon, sweet soy, chestnut and eucalyptus.

TOT Negroni

(Tea-mooth)

Spirit-forward; Porter’s Tropical Old Tom Gin (Juniper Gin cold-distilled with passion fruit, guava and white tea), Blackberry and Tomato Seeds, Campari and Tea-mooth – a vermouth created from a signature blend of fine, ethically-sourced teas and herbs designed especially by The Rare Tea Company.

Peachy Canchanchara

(Peach Emoji)

Peach-forward; Havana Club Seleccion des Maestros Rum, Lime, Celery-Blossom, Water and Peach Emoji – this ‘nose-to-tail’ Crème de Pêche displays the flavors in the fruit which are usually missed –stone, skin, and flesh, and balances sweetness, acidity, texture and aromatics.
