It’s all about the spritz. As the temperatures rise, it’s all about refreshing cocktails to keep things light and we are all about the Pacific Wheel at Belcampo Santa Monica.
“Named after the world’s only solar-powered Ferris wheel, located in Santa Monica’s Pacific Park, the Pacific Wheel cocktail is a light & effervescent Ferris Wheel of flavors that’s as entertaining as the ride. Enjoy with friends,” says Soigné Group’s Josh Goldman.
This low-ABV drink is made with Cynar 70, St Germain, mango and Meyer lemon preserves along with soda water and sparkling, making it the ideal summer beverage.
Pacific Wheel recipe
- .75 oz St Germain
- .75 oz Lustau fino sherry
- .5 oz Cynar 70
- 1 tbsp mango & meyer lemon preserves
- 1 tsp Extinct Chemical Co. acid phosphate
- 2 dash Scrappy’s lavender bitters
- 1 dash Scrappy’s celery bitters
- 1 oz soda water
- 2 oz sparkling wine
Shake well, then add soda and sparkling wine, fine strain into highball with ice cubes. Garnish with a discarded lemon twist and micro wildflowers.
