The piña colada might just be our very favorite classic rum drinks to sip on while relaxing, preferably beside a turquoise blue body of water. Over at Otium in Downtown Los Angeles, Chris Amirault is putting his own unique spin on this Caribbean drink. A refreshing and smoky take on a piña colada served up with the herbaceous notes of green tea and a light touch of coconut.
“On my off days, I enjoy taking advantage of two things: green tea and cigars,” says Amirault. “I usually have a cup of green tea every morning and a cigar or two during the week on my days off. I started drinking scotch and coconut water as a slightly more hydrating day drink and one day I thought hey, this would make a delicious pina colada. Since scotch and green tea are also friendly, I felt the herbaceous notes of the Sencha would compliment nicely what we were doing with the tiki variation.”
Pina Colada Recipe:
- 1.75 oz milk washed famous grouse smokey black scotch
- .75 oz lime juice
- .5 oz pineapple juice
- .5 oz simple syrup
- .25 oz Clément Mahina Coco
- 3 dashes Bittermen’s tiki bitters
Serve up with Laphroiag spritz and Sencha green tea powder.
