From their 16th floor perch atop the Kimpton EPIC Hotel in Downtown Miami, the Area 31 restaurant delivers panoramic views of downtown, Biscayne Bay and Brickell Key. The outdoor lounge of this upscale eatery offers waterfront dining in the sky, featuring sustainable seafood, tasting menus -and craft cocktails created from the bar staff’s skilled imagination.
For example, the When She Sings cocktail is built on Singani 63, a new-to-the-U.S. imported Bolivian brandy, which lends a floral bouquet and light, spicy notes. The 500 year-old clear spirit, distilled from white Muscat of Alexandria grapes, is known as the national drink of Bolivia.
“I chose Singani 63 for this cocktail”, says Area 31 bartender, Doug Kincaid, “because, to me, it represents a sense of something beautiful, adventurous and new. The complexity yet delicateness of the Muscat grape really shows up beautifully in the spirit. The herbal and spiced notes in the Bolivian spirit pair perfectly with fresh citrus like the lime, lemon and orange, making for a perfectly balanced cocktail. The final result is a palate awakening adventure.”
When She Sings recipe and preparation
- 1.5 oz. Singani 63 Bolivian Brandy
- .25 oz. J.D. Taylor’s Velvet Falernum
- .25 oz. Yellow Chartreuse
- 2 Orange Slices
- 1 Lime Wedge
- 1 Lemon Wedge
- 1 Orchid Flower, for garnish
Muddle the orange slices, lime and lemon wedges. Place all ingredients in a shaker with ice and vigorously shake. Double strain and pour into a rocks glass with ice. Garnish with an orchid.
