This summer, we are totally crushing on gin. It’s light, it’s refreshing, it’s boozy – and it mixes with basically anything. For this week’s Drink of the Week, we love the Blighty Mojito made with Portobello Road Gin at Evelyn Drinkery. Created by Jake Burger of Portobello Road Gin, this cocktail is an update on the classic preparation – generally made with rum – for the perfect summer tipple.

The Blighty Mojito Recipe:
- 1.75 oz Portobello Road Gin
- .75 oz lime juice
- .75 oz sugar syrup
- 10 – 15 mint leaves
- 1 inch of cucumber diced
- Top tonic
